Sugar Is Sweet For Diabetics

Over 200 million people are Diabetic world-wide, millions are border-line and millions live with diabetes and don’t even know it.

Diabetes actually runs on my fathers side and he was diagnosed over 10 years ago. He has always loved sweets, cakes, doughnuts, cookies you name it. And one myth is people assume if you eat a lot of sugar you obtain diabetes, this is in fact not true. It is genetic. (Of course being obese doesn’t help either).

Anyway, it’s always been hard to find recipes that are diabetic-friendly. Many assume “Just don’t put sugar,” when it is in fact more than that. You have to look at every single ingredient. My dad just can’t eat an apple, have an orange, or even have a slice of water-melon. And he’s only allowed half a banana. Things we easily take for granted.

Meals are easier to cook and manage, but it’s always been the desserts that bothered me. It’s sad if your whole family is having coffee and a piece of cake and you look over to see your dad only drinking the coffee.

Not only does sugar content have to be looked at, but carbohydrates do as well (as they convert to sugar). I used to watch cooking shows like ANNA OLSEN’S “SUGAR,” and they were pretty decent. Instead of using sugar, obviously I would use Splenda (sugar substitute), instead of chocolate I would replace it with un-sweetened chocolate, and minor things like substituting heavy cream for buttermilk.

It always tasted good, but something was always off.

Something we have found with Splenda is you do not need as much as what’s asked. Because Splenda has such a taste it becomes overpowering and sometimes can ruin the recipe. For instance, if the recipe calls for 2 cups of Splenda, I usually put about half a cup (or a touch more).

It also makes a great gift! If you have recently been diagnosed with diabetes or know someone who is diabetic this is a fabulous book to purchase. Unlike what certain people might think, people WILL purchase this book or books similar to this, there is a demand for diabetic-friendly recipe books. Like I said, over 200 million+ people world-wide have diabetes. There are many books out there, so just skim through some and purchase the one that suits you best. These books are extremely helpful and useful.
